Onion fritters are popular all over India. Some call it peyaji, some onion pakora. All across India, people have made various versions of the onion fried in batter. Whatever shape of form it may be, onion fritters make a great evening snack.

Here are simple and easy recipes for making onion fritters in 6 ways:

#1 Simple crispy onion fritters

Ingredients:
Onion – 1 big
Green chilli – 1 to 2 as per taste
Salt or black salt – ½ tsp or as per taste
Black pepper powder – ¼ tsp
Maida (all purpose flour) – ½ cup
Cornflour – ¼ cup
Water – ¼ cup
Vegetable Oil to deep fry

How to make:

This is the easiest and crispiest recipe for onion fritters. Just slice the onions into thin pieces and chop the chilli. In a bowl take maida and cornflour. Add salt, black pepper, onion, chilli and add a little water. Mix and then add a little more water, do not add all the water at once. Mix well, put as much water needed to make a paste that will hold the onions together.
In a frying pan heat vegetable oil. When it gets hot, put the flame to low/medium and add the fritters. Fry each side for few minutes.

#2 Easy homemade peyaji

Ingredients:
Onion – 1 big
Green chilli – 1 to 2 as per taste
Salt – ½ tsp or as per taste
Kalo jire (nigella/kalonji) – ¼ tsp
Besan – 1 cup
Water – 1/3 cup
Mustard Oil to deep fry

How to make:

Peyaji is the traditional Bengali version of the onion fritter. It is perhaps best enjoyed in the rainy season with a bowl of muri (puffed Rice) and steaming hot tea.
To make peyaji, chop finely the onion and chilli. In a bowl mix maida, salt, kalo jire, salt and add a little water. Mix and then add little water. Never add all the water at once. It may form lumps or the batter can get too watery. The batter should be free flowing but not too thin or thick.
Heat mustard oil in a frying pan to deep fry. Scoop out portions with your hand and add to the oil. Fry each side for a few minutes. If you want crispier, fry for some more time in medium or low flame. Make sure your fitters do not get burnt.

#3 Onion fritters street food way

Ingredients:
Onion – 1 big
Green chilli – 1 to 2 as per taste
Salt – ½ tsp or as per taste
Haldi (turmeric powder) – ¼ tsp
Ginger – 1/3 tsp grated
Coriander leaves – 1 tsp chopped
Ajwain (carom seeds) – ½ tsp
Hing (asaefotida) – as per taste
Black pepper – as per taste
Besan (gram flour) – ½ cup
Rice flour – ¼ cup
Red chilli powder (optional) – ¼ tsp
Baking powder (optional) – ¼ tsp
Water – 1/2 cup
Oil to deep fry

How to make:

The process is pretty simple. Just chop the onion and chilli finely. Put this in a mixing bowl and add to it all the ingredients – salt, turmeric powder, ginger, coriander leaves, ajwain, hing, black pepper, besan, rice flour, baking powder. Add water little at a time and mix. The batter should be a little thick but should also flow freely.
For frying, you can use mustard, sunflower or vegetable oil. Heat a pan and enough oil to deep fry the pieces. Lower the flame when the oil is hot. Add the fritters and fry each side well in medium heat.

Please note that in this recipe the ingredients hing are red chilli powder are to be used sparingly. Do not add these if the person who will have it has been sick or is recovering from any sickness. Also the use of ginger, chilli and black pepper will make it quite spicy, therefore use your discretion. You can avoid black pepper.

#4 Onion fritters the South Indian way

Ingredients:
Onion – 1 big
Green chilli – 1 to 2 as per taste
Kadi patta (curry leaves) – 8 to 10
Salt – ½ tsp or as per taste
Haldi – ¼ tsp
Ginger – 1/3 tsp grated
Coriander leaves – ½ tsp chopped
Besan (gram flour) – ½ cup
Rice flour – ¼ cup
Red chilli powder (optional) – ¼ tsp
Water – 1/2 cup
Mustard Oil to deep fry

How to make:

In the South Indian style, it is the addition of kadi patta that adds the different flavor. Rice flower makes it quite crispy.

To make this onion fritter, slice the onion, chilli, kadi patta, coriander finely. In a bowl put these chopped pieces and add besan, rice flour, red chilli powder, salt, ginger, coriander leaves, haldi. Add water little at a time. Mix well, but add only as much water needed. The batter should neither be too thick or too watery. There should be no lumps.
In a frying pan, heat mustard oil. You can also use vegetable oil in this recipe if you want to. Scoop out the mixture and put in oil. Fry for a few minutes on both sides.

#5 Onion and potato fritters

This recipe will take about 20 minutes to prepare but it is definitely a great snack.

Onion fritters

Ingredients:
Onion – 1 big
Potato – 1 big
Green chilli – 1 to 2 as per taste
Salt – ½ tsp or as per taste
Black pepper powder – ¼ tsp
Coriander leaves – 2 tsp finely cut
Maida (all purpose flour) or besan (rice flour) – ½ cup
Cornflour or rice flour – ¼ cup
Water – ½ cup
Oil to deep fry

How to make:

You can peel the potatoes or keep it. Wash the potatoes well and cut very thinly. After cutting the potatoes, wash in cold water again and keep aside. Cut the onions and chilli in fine pieces. Add all the ingredients in a bowl and then mix in the water little by little. Make a medium thick batter.
You can use mustard oil, sunflower oil or any vegetable oil of your choice to deep fry. The potato takes more time to get fried so the thinner the pieces are, the quicker those will be cooked. It may take up to 15 minutes for the fritters to become ready.

#6 Onion and veggie fritters

Here is a version of onion fritters for various moods and seasons. Use whatever veggies you have for the season. You can use vegetables like cabbage, cauliflower, capsicum, beans, beets, potatoes or carrots. Grate the vegetables or chop it very finely.

Ingredients:
Onion – 1 big
Chopped veggies – 1/2 to 1 cup finely chopped
Green chilli – 1 to 2 as per taste
Salt – ½ tsp or as per taste
Black pepper powder – ¼ tsp
Coriander leaves – 2 tsp finely cut
Grated ginger – ½ tsp
Grated garlic – ½ tsp
Maida (all purpose flour) or besan (rice flour) – ½ cup
Cornflour or rice flour – ¼ cup
Water – ½ to 1 cup
Oil to deep fry

How to make:

The process is easy. Cut all veggies very finely or grate it. Cut onions and chilli finely. Add all the ingredients in a bowl and mix well. Add water a little at a time and mix it. Make sure no lumps are formed.
Heat the oil well. You can use mustard oil or vegetable oil of your choice. When the oil is hot, put the flame to medium or low and add the fritter scoop. Depending upon the vegetable used it may take up to 5 to 10 minutes to get fried on both sides.  Make sure the flame is medium so that it does not get burnt. If you have to raise the flame, do it only a minute and then lower the flame again. Food cooked in medium flame tastes much better.

Enjoy these tasty fritters with tomato sauce or chutney.
