Full meal or snacks, we love chicken mayo sandwich at all times. Not only is this sandwich delicious but extremely healthy. You can make it without any oil, butter or cheese but will still taste awesome. The chicken is plain boiled, which makes it an excellent source of protein and very healthy for the liver.

Ingredients for 2 sandwiches:

Chicken – 2-3 small or medium pieces
Ginger – 1 tsp grated or cut into small piece
Black pepper – ½ tsp
Mayo – 2-3 tsp
Tomato sauce – 1 tsp
Finely cut onion and green chilli – 2 tsp
Curd (optional) – 2 tsp
Oregano seasoning or maggi masala as per your taste (optional)
Bread – 4 slices
Salt – as per taste

Chicken – Boil the chicken pieces in water using salt and ginger. Boil it for 10 minutes. Let it cool down and then drain away the water. Take the chicken and with your fingers, shred it. If you have leftover cooked chicken, you can also use it. Just wash it to get rid off the taste of the dish and then shred it.

In a bowl, mix mayonnaise, curd, tomato sauce, little salt, black pepper, onion and chilli. Curd makes it smoother and adds more taste to it, plus it is also healthy. Mix it all well. Add the shredded chicken and mix.

If you want, you can add a little oregano seasoning or maggi magic masala powder to it. Adjust the mayo and masala as per your taste and preference. If you like to have cheese, you can add cheese spread or grated cheese cubes to the mixture. You can also add coriander leaves, tomatoes or any other herb of your choice.

Take two slices of bread and cut off the brown edges, slowly and cleanly with a big knife. Then put the mixture between the slices. If you like to have fresh bread sandwich, you are ready to go. Or if you like it grilled, heat your frying pan and lightly grill it for 5 seconds. Turn it over and heat the other side.

Here you can also use a little butter/ghee/oil to grill both the sides. It depends upon your taste.

Now cut the ready sandwich diagonally. Enjoy your delicious chicken mayo sandwich!
