Although cake is not a traditional Nababarsha dish, but I love to make it during special occasions. I like to serve it with tea or sweets to our guests who visit us during Poila Boisakh.
There are so many cakes available in the market during the festivals nowadays but I love homemade cakes the most. I love to make cakes at home, it is simple to do and eating a freshly made cake has the best taste.
We usually like to have cake with our morning or evening tea. So I have a very easy and hassle free way to make great tasting cakes. I do not put cream or icing in these cakes. Icing is good for birthdays and special occasions but a fresh baked cake is good for everyday. Also this kind of cake has a shelf life of two to three days in or outside the fridge.
Here is a very simple and easy way to make wonderful butterscotch flavoured cake at home. Anybody can make it. The best thing is it is a soft and healthy cake.
Ingredient ratio –
Maida – 1.5 cup
Sugar – 1cup
Eggs – 3
Baking powder- 1 tsp
Butter – 200 gms
Butterscotch syrup – half cup
Cashew and raisin – optional
Butterscotch syrup is available in the supermarkets or you can buy online. If you do not have butterscotch syrup, you can simply skip it to make a plain cake. In a big bowl add maida, baking powder and sugar. Mix well and add 3eggs. You can also beat the eggs and add.
If you want to make it quickly, take one cup sugar and then powder it in the mixer. This way you do not have to wait for the sugar to melt.
Add butter and butterscotch syrup.
Break the cashews into half and add it with other dry fruits.
Let it rest outside for half an hour.
Mix it all very well so that the batter is smooth.
You can also use your hand to check if the batter is without any lumps. The batter should be very smooth and it should look like this.
Now butter a paper, I used a clean A4 paper. Also butter or oil the bowl in which you will cook. You can bake the cake in pressure cooker, oven or microwave if you want.
Place the batter in the bowl and heat up the oven for five minutes. Place the cake and bake for 25-30 minutes. Take it out and pierce it with a knife or toothpick. If it does not come out clean, bake it for 5 minutes more. When it comes out clean, your cake is ready.
