One pot chicken and rice recipe is, as the name suggests, chicken and rice cooked in one pot together. It is one of the best and most delicious recipes, especially when you are travelling or have little time to eat.
The chicken is boneless and cooked with the rice but is not the same as biryani or chicken fried rice. It uses less spices and oil. One pot chicken and rice is healthier than both these dishes and it can also be customized and made more healthy.
One pot rice meals are the invention of the 21st century where we are starved of time. A quick healthy meal that is easy to cook will save you a lot of time. One port meals can be consumed with a spoon making it practical for many people working outside.
Easy One Pot Chicken And Rice Recipe
One pot meals are more popular in the west. However, this easy one pot chicken and rice recipe is made in the Indian style using garam masala.
Take boneless pieces of chicken and cut into small pieces. You can use chicken portion of any size in this recipe but make sure its boneless. Crush or make a paste of ginger, garlic and chillies. In a bowl, add these and then add curd and salt. Mix these well. Marinate the chicken pieces and let it rest for at least 15 – 30 minutes.
Preparing the rice
Use arwa/atap or basmati rice for this dish. Wash the rice well and soak it for 30 minutes.
How to cook
Take a degchi, or a deep bottom pan or any utensil where you can cook the rice. In this degchi, add 2 to 3 tsp vegetable oil. Add the marinated chicken pieces and fry for a minute. Do not cook it fully. Take it out and put aside.
In the same pan, add 2 to 3 tsp ghee and keep the flame medium to low. To it add 1 tej patta, 1/2 teaspoon sada jira and let it splutter. To it add 4 cloves, 2 green cardamom (choti elaichi), 1 black cardamom (bari elaichi), 1 to 2 sticks of cinnamon (darchini).
As the garam masala releases aroma, add finely cut onion and then tomato to it. Add salt, sugar (as per your preference or you can skip), and black pepper powder. Let it cook for a minute. Then add half tsp of coriander powder and let it cook till it releases the oil. When it does so, add the rice without the water and fry the rice for 1 minute. Now it is time to add water.
For 1 cup rice, use 2 cups of water and later add water gradually. Let the rice come to a boil, lower the flame and cover it. Check after 3 – 4 minutes if the water is needed. Add little water at a time, no more than half a cup.
After 5 to 7 minutes when the rice is half done, add the chicken pieces and add little water. Add coriander leaves. Let it cook for a few minutes.
Check if the rice is done by taking a grain. Crush this between your fingertips, if it gets mashed, it is done. Turn off the heat and gently mix the rice. Be careful not to break the grains.
One pot chicken rice tastes best when warm but it tastes no less delicious other time. It makes a very healthy tiffin for kids and office goers.
- You can add more garam masala (whole or powder) to make it more spicy. Similarly, if you are cooking for a child or a person use less spices.
- You can use whole black pepper instead of powder. Add it with the garam masalas to splutter.
- If you do not have boneless chicken do not worry. Marinate and fry the usual way. Keep it aside and when it cools, take the meat away from the bones. It will come off easily. You can also cut and resize these chicken pieces with a knife if you want.
- You can vegetables of your choice to make it healthy. Add finely cut carrot, bean, corn or capsicum. In winters, add fresh peas.
- Remember that this one pot recipe is not the same as chicken fried rice or chicken biryani. You can customize it and it does not matter if the rice is soft and mushy. Many prefer it that way.
- You can add half a cup of milk and skip that portion of water for a healthier version. Add a pinch of saffron to make it better.
- You can use leftover chicken for this recipe.
- You can add grated cheese or fried onions or whatever suits your taste buds.
Quick And Easy One Pot Rice With Sausage
Want an even easier one pot chicken recipe ? Do not have time to marinate chicken? Do not worry. Always keep a pack of chicken sausage ready with you and you can make a quick one pot rice meal.
How To Make One Pot Sausage Rice
Cut the sausage into smaller pieces of your liking. Add 2 tsp vegetable oil in the degchi or deep bottom pan. Fry to the sausage for a minute. Take it out and keep aside.
After this you can use the previous recipe or follow a quick and simpler one below.
Take half a cup of rice. Wash and soak for 30 minutes for quicker cooking.
In the same pot, add butter or ghee. Add whole black pepper, finely cut onion, garlic and tomato. Add finely chopped capsicum or vegetables of your choice. Add salt and sugar (optional). Add the rice without water. Fry the rice and then add 1 cup of water. Let it come to a boil. Reduce flame and cover. Check if the water had dried after a few minutes and add half a cup of water. Add the fried sausage.
You can put coriander leaves or spring onion if you want, it gives a nice flavour. You also add oregano and mixed herbs if you want. Check if the rice is cooked by taking a grain and crushing it between your finger. It is mashes it is done. Turn off flame and enjoy your one pot meal warm.
